Fermented with Brettanomyces in classic, white oak barrels, this is a saison with the body of a rustic, farmhouse styled ale. Sour without being overpoweringly tart, this is a beer born of the countryside with the subtle barnyard aromas of fresh-cut hay and clover. We take this original sour and re-ferment it with fresh peaches, apricots, cherries, and blackberries to add a little Napoleonic flair. Like all indulgences, this little French delight is best enjoyed in smaller doses.
